Cod from the Atlantic Ocean

The Cod is found in the Atlantic Ocean, they can change colour depending on their water depth, from a khaki green to a reddish brown with small yellowish brown spots, but only the back changes colour the underbelly remains its creamy silver, they can weigh up to 30lbs although some heavier have been recorded and grow up to three and a half feet in length, they eat crabs, starfish small fish, snails and slugs. they are now farmed commerically and are one of Englands most loved fish perhaps because their white flakey meat wrapped in batter makes up part of one of our favourite meals good old “Fish and Chips” they can also be grilled baked or poached. the cods liver are processed to make cod liver oil.

Cod Cheese and Tomato Bake

3 Tablespoons Lemon Juice
3 Tablespoons shredded Chedder Cheese
Sprinkle of Salt [to your taste]
Sprinkle of Pepper to your taste]
3 Lemons
3 Tomatoes
1 Medium sized Onion
2lbs Cod Fillets

Instructions.

  • [1] Cut two of the lemons in half and squeese the juice from them.into a small dish
  • [2] Cut the remaining lemon into wedges
  • [3] Cut the tomatoes into four wedges.
  • [4] Peel and thinly slice the onion.
  • [5] Spread the onion slices over the bottom of a baking dish.
  • [6] Arrange the cod fillets over the onion slices.
  • [7] Brush the cod fillets with the lemon juice.
  • [8] Over the cod fillets, sprinkle salt, pepper and paprika to your taste.
  • [9] Bake in the oven for fifteen to twenty minutes at 400
  • [10] Arrange the tomato wedges around the cod fillets.
  • [11] Over the cod fillets sprinkle if you desire a little more of the salt and pepper.
  • [12] Over the cod fillets sprinkle the shredded chedder cheese.
  • [13] Return the dish to the oven and bake for a further fifteen to twenty minutes.
  • [14] Remove the dish from the oven if the cod fillets do not flake easily or the tomatoes are still hard, return the dish to the oven for five minutes or so longer.
  • [15] However if the cod fillets do flake easily and the tomatoes are soft, then arrange the lemon wedges on top of the cod fillets
  • [16] Place onto a serving plate
  • [17] Serve and enjoy
