F is for Flounder
Flatfish That Is
The European Flounder swims in the Mediterranean Black and White seas, they are a dull brown with brown reddy spots on the back with a white underbelly, although it can change colour to blend in with its surroundings which provides it with an excellant camouflage to escape its enamies, an oval shaped flatfish, they weigh about 6lbs and can grow up to twenty inches in length, they eat shrimps, snails slugs and worms. they can be grilled, fried, baked or poached,
Stuffed Flounder
1 Tablespoon Lemon Juice.
2oz Blue Cheese.
1 Egg
4oz Butter
1 Small loaf of sliced White Bread
Half teaspoon Salt
2 Teaspoons Thyme
1 Tomato
2 Celery Sticks.
6 Flounder Fillets
Instructions
[1] Crumble up the blue cheese onto a plate.
[2] Cut the butter in half.
[3] Remove the crusts from the bread slices and crumble the bread up into bread crumbs. enough to make one and a half cups.
[4] Chop the thyme
[5] Chop up the tomato.
[6] Chop up the celery sticks.
[7] Melt a quarter of the butter in a pan and add the thyme, tomato and celery
[8] Cook for about fifteen minutes. or until the tomato and celery are soft.
[9] Remove the pan from the heat, and stir in the blue cheese, breadcrumbs and salt.
[10] Break the egg and mix it with a fork.
[11] Add the egg to the mixture and stir.
[12] Remove the mixture from the heat
[13] Lay the flounder fillets on a plate and spread the mixture over them
[14] Roll up the fillets and put them with their fold facing down, into a baking dish.
[15] In a pan melt the remaining butter, and add the lemon juice.
[16] Pour the liquid over the flounder fillets.
[17] Place in the oven and cook for thirty minutes at 350
[18] Remove the dish from the oven, if the flounder fillets do not flake easily, return the dish to the oven for five minutes or so longer.
[19] However if the flounder fillets do flake easily
[20 Place on a serving plate
[21] Serve and enjoy.
