H is for Herring
Oily Fish from the Atlantic and Pacific Oceans
The Herring are found in the Atlantic and Pacific oceans, they are classed as an oily fish, they are a shiny bluey grey on the back with a silver underbelly, they weigh about seven to ten ounces and grow to about one foot in length, they have sharp teeth and eat small fish and fish larvee and can be grilled, fried, and smoked and to your taste pickled and salted.
Herring with a Mustard Sauce
2 Teaspoons White Wine Vinegar
Half pint Milk
1oz Plain Flour.
1 Teaspoon Caster Sugar
1oz Butter
Butter for greasing
Sprinkle of salt
Sprinkle of Pepper
2 Teaspoons Mustard Powder
Parsley Sprigs to garnish
1 Lemon
4 Herrings
Instructions:
[1] Clean the herrings, remove their heads and fillet them.
[2] Sprinkle the salt and pepper over the herrings to season them
[3] Grease a roasting dish with the butter.
[4] Place the herring fillets in the roasting dish and bake for about twenty minutes at 200 or until the herring fillets flake easily.
[5] Melt the 1oz butter in a pan
[6] Add the flour to the butter and stir for about one minute.
[7] Remove the pan from the heat.
[8] Slowly stir in the milk, place back onto the heat and bring to the boil.
[9] During this time stir the mixture until it thickens.
[10] Simmer for two or three minutes.
[11] Add the white wine vinegar to the sauce and stir.
[12] Add the caster sugar to the sauce and stir.
[13] Add the mustard powder to the sugar and stir
[14] Cut the lemon into wedges.
[15] Remove the dish from the oven
[16] Place the herrings on a serving plate.
[17] Pour the sauce over the herrings
[18] Place the parsley sprigs on the herrings to garnish the fish
[19] Place the lemon wedges around the herrings to garnish the fish.
[20] Serve and enjoy
