Another Cold Water Fish

The John Dory are found in the Atlantic and Pacific Oceans and the Mediterranean Sea, they are olive green in color with a silvery white underbelly, on each side is a dark spot that confuse any approaching prey. It weighs about 18lbs and grows to about three feet in length, they eat pilchards, sardines, herrings and sand-eels, they can be fried, baked or grilled.

Panfried john Dory with a Creamy Mushroom and White Wine Sauce.

5 Tablespoons White Wine.
1 Tablespoon Olive Oil.
5 fluid oz Double Whipping Cream
6oz Butter.
A Sprinkle of Salt [to your taste]
A Sprinkle of Pepper [to your taste]
7oz Mushrooms
1 Medium sized Onion.
1.3lbs john Dory Fillets

Instructions

  • [1] Wash and slice the mushrooms.
  • [2] Peel and finely slice the onion.
  • [3] Place most of the butter into a large frying pan and heat
  • [4] Place the john dory fillets in the pan and fry them for about ten minutes or until the fillets flake easily.
  • [5] Remove the fillets from the pan and keep warm.
  • [6] Add the remaining butter into the same pan and stir.
  • [7] To the butter add the olive oil and stir.
  • [8] Add the sliced onion and fry until it is soft.
  • [9] Add the sliced mushrooms, at this point turn up the heat and fry for about another five minutes.
  • [10] Add the white wine and let it sizzle for a few minutes until it has almost vanished.
  • [11] At this point lower the heat and add the double whipping cream, stir well until the sauce begins to thicken.
  • [12] Add the salt and pepper to your taste.
  • [13] Remove the John Dory Fillets to a serving plate.
  • [14] Remove the sauce from the heat and pour over the fillets.
  • [15] Serve and enjoy
