K is for Kingfish

 King Mackerel

The Kingfish is found in the Atlantic Ocean and The Gulf of Mexico, it is also called the King Mackerel, their colour ranges from olive to a blueish green on the back which fades to a pale silvery pink on the sides and a white underbelly, they weigh up to 90lbs and grow up to two feet in length, they eat anchovies, sardines, minnows and squid and can be fried, baked or grilled

Chilli Grilled Kingfish

1 Teaspoon of Olive Oil
Sprinkle of Salt
Sprinkle of Pepper
1 Tablespoon Basil
3 tablespoons Thyme
3 Red Chillis
3 Garlic Cloves
1 Lemon
4 Kingfish Fillets

Instructions

[1] Finely chop the basil.
[2] Finely chop the thyme.
[3] With a mortar and pestle mash the garlic cloves.
[4] Add the chillis and mash together
[5] Add the basil and mash it together with the other ingredients.
[6] Add the the thyme and mash it together with the other ingredients.
[7] Grate the zest of the lemon and mash it together with the other ingredients
[8] Cut the lemon in half and squeese the juice into the mixture and mash together.
[9] Add the salt and mash together.
[10] Add the pepper and mash together.
[11] Add a lttle of the olive oil to make a liquidy paste.
[12] Remove the mixture from the mortor and place on a plate.
[13] Take the kingfish fillets and with a knife spread the mixture onto them on both sides.
[14] Lay the fillets on a second plate and place them in a refridgerator for one hour.
[15] Grill the fillets for three minutes on both sides or until almost cooked on a medium high heat.
[16] Remove the fillets from the grill and place onto a serving plate.
[17] Serve and enjoy
