M is for Mackerel

Strong Atlantic Fish

The Mackeral is found in the Atlantic Ocean, they are a member of the cod family, they are greeny brown in colour with pale orangy spots on the back with a white underbelly, they weigh up to 20lbs and grow up to four feet in length, they eat small fish, crabs, slugs snails and worms, and can be fried baked, grilled and poached.

Baking Mackeral and Tomato Bake.

1 Tablespoon Red Wine Vinegar
3 Tablespoons Olive Oil
1 Teaspoon Parsley
6 Ripe Tomatoes
2 Onions
3 Mackerel

Instructions

[1] Finely chop the parsley
[2] Cut the tomatoes in half, remove the seeds and chop them into medium sized pieces.
[3] Peel and finely chop the onion.
[4] In a bowl place the red wine vinegar, two tablespoons of the olive oil, the basil, the chopped tomatoes and the chopped onion.
[5] Mix the ingredients.
[6] Spread the mixture over the bottom of a baking dish.
[7] Lay the mackeral on to the mixture, skin side up.
[8] Sprinkle the remaining tablespoon of the olive oil over the mackerel
[9] Cover the baking dish with foil.
[10] Place the baking dish in the oven for about thirty minutes at 170
[11] Remove the baking dish and remove the foil.
[12] Place the dish back into the oven for a further five minutes
[13] Remove the mackeral onto a serving plate
[14] Serve and enjoy
