P is for Pollock
Another Fish from the Cod Family
The Pollock is found in the Atlantic Ocean, they are a member of the cod family, they are greeny brown in colour with pale orangy spots on the back with a white underbelly, they weigh about 20lbs and grow to about four feet in length, they eat small fish, crabs, snails, slugs and worms and can be fried, baked, grilled and poached.
Perfect Pollock Soup
1 Tablespoon Soy Sauce.
1 Tablespoon Olive Oil
1 tablespoon Brown Sugar
1 Teaspoon Basil
1 Teaspoon Rosemary
4 Tomatoes
1 Onion
2 Pollock Fillets.
Instructions
- [1] Finely chop the basil.
- [2] Finely chop the rosemary.
- [3] Place the tomatoes in boiling water for a few minutes, then remove the tomatoes and leave to cool for a few seconds.
- [4] Remove the tomato skins and chop the tomato into small dice shaped pieces
- [5] Chop the onion into small pieces,
- [6] Place the olive oil in a pan on a medium heat and in it place the onions.
- [7] When the onions soften and turn brown in colour, add the soy sauce, the brown sugar, the basil, the rosemary and the chopped tomatoes,
- [8] Stir the ingredients well
- [9] Bring the ingredients to the boil.
- [10] Leave the ingredients to simmer for five to ten minutes or until they soften.
- [11] Add the pollock fillets and simmer for a further ten to fifteen minutes.
- [12] Remove the pan from the heat.
- [13] Ladle the soup from the pan into seperate soup dishes
- [14] Serve and enjoy
