S is for Salmon

A Fish Of Many Waters

The Salmon lives in the Atlantic and Pacific Oceans, they are a member of the trout family, they are silver in colour, but after returning to their streams of birth to lay their own eggs they change colour to pale grey on the back with a yellowish white underbelly, although some fish turn to overall dull green, they weigh about 8lbs and grow about two and a half feet in length, they eat shrimp and krill. and can be baked or poached.

Salmon Parcels

Quarter cup of Cold Water.
8oz Plain Flour.
2oz Butter
Half teaspoon Salt.
2 Tablespoons Parsley
2 Tablespoons Basil
12oz Puff Pastry
2 large Salmon Fillets

Instructions

  • [1] Finely chop the Parsley.
  • [2] Finely chop the Basil
  • [3] In a bowl mix together the butter, salt, parsley and basil.
  • [4] Cover a baking tray with a sheet of grease proof paper.
  • [5] Roll out the puff pastry and cut it in to four equal square pieces
  • [6] Place two of the pastry squares onto the grease proof paper covered baking tray.
  • [7] Lay each salmon fillet on each pastry square.
  • [8] Spread the herb mixture over the salmon fillets.
  • [9] Place the two remaining pastry squares over the mixture and press down on all sides to form a parcel.
  • [10] Make a couple of slits in the parcel top to allow the steam to escape.
  • [11] Place the baking tray in the oven for about twenty minutes at 200
  • [12] Remove the baking tray from the oven.
  • [13] Remove the salmon parcels from the tray onto a serving plate.by Sander
  • [14] Serve and enjoy.
