W is for Whiting
The Whiting is found in the Atlantic Ocean, the Mediterranean and the North seas, they are a member of the cod family, they are a dustry green in colour with silver sides and a white underbelly, they weigh about 7lbs and grow to about two feet in length, they eat crabs, cuttlefish, squid, shrimps, snails slugs and worms, and can be fried baked or grilled
Whiting in Parsley Sauce
One Pint of Milk.
2oz of Plain Flour
2oz of Butter
Sprinkle of Salt
Sprinkle of Pepper
3 Tablespoons of Parsley.
4 Whiting Fillets.
Instructions.
- [1] Grease a baking dish and in it place the Whiting fillets.
- [2] Take a little of the butter and spread it over the Whiting fillets.
- [3] Cover the baking dish with a sheet of silver foil and bake in the oven for thirty minutes or until the fish is tender.
- [4] Finely chop the parsley.
- [5] In a pan melt the butter and stir in the plain flour, stir continually until the mixture forms a smooth paste
- [6] Remove the pan from the heat, and gradually pour in the milk, stir continually until it forms a sauce.
- [7] Return the pan to the heat, stirring continually and bring to the boil.
- [8] Reduce the heat and simmer for about three minutes.
- [9] Stir the sauce occasionally until it thickens
- [10] Stir in the chopped parsley.
- [11] Add a sprinkle of salt
- [12] Add a sprinkle of pepper.
- [13] Remove the Whiting fillets from the baking dish.
- [14] Place the Whiting fillets onto a serving plate.
- [15] Pour the parsley sauce over the Whiting fillets.
- [16] Serve and enjoy.
