The Yellowfin Sole is found in the Pacific Ocean and the Japan, The Okhotsk and The Bering seas, it is a dark olive green or dark brown in colour with dark spots, it weighs about 4lbs and grows up to nineteen inches in length, it eats cuttlefish, slugs and worms and can be fried or baked.

Yellowfin Sole in a Lemon Butter Sauce.

3oz of Butter.
Sprinkle of Salt.
Sprinkle of pepper
1 teaspoon of Parsley
1 Lemon.
4 Yellowfin Sole fillets

Instructions

[1] Finely chop the parsley.
[2] Cut the lemon in half and squeese the juice into a dish.
[3] Into a saucepan melt an ounce of the butter on a medium high heat.
[4] Place the Yellowfin Sole fillets into the butter.
[5] Cook for about three minutes or until the fish turns golden in colour
[6] Turn the fish over.
[7] Pour the lemon juice into the mixture.
[8] Add the remaining two ounces of butter.
[9] Add the chopped parsley
[10] The mixture will blend to form a sauce
[11] Stir the mixture well
[12] Remove the saucepan from the heat and remove the yellowfin sole fillets
[13] Place the Yellowfin Sole Fillets on to a serving plate.
[14] Pour the sauce over the Yellowfin Sole fillets.
[15] Add a sprinkle of salt.
[16] Add a sprinkle of pepper.
[17] Serve and enjoy.
