Stuffed cohog is a dish that’s very  popular.  Here’s a traditional recipe from the region-

What you need:
● 12-15 medium to large quahog clams
● 1 cup quahog clam juice (retained from steaming)
● 1 cup breadcrumbs
● 1/2 cup red and green bell pepper, finely chopped
● 1/2 cup onion, finely chopped
● 1/4 cup celery, finely chopped
● 2 garlic cloves, minced
● 1/4 cup fresh parsley, chopped
● 1/4 tsp dried thyme
● 1/4 tsp dried oregano
● 1/4 tsp black pepper
● 1/4 tsp paprika
● 1/4 tsp Worcestershire sauce
● 2 tbsp olive oil
● 2 tbsp butter
How to prepare the quahogs

● Scrub the quahog shells clean under running water to remove any dirt.
● Steam the quahogs in a large pot with about an inch of water until they open (about 5-10 minutes). Discard any unopened clams.
● Once cooled, remove the meat from the shells, chop it finely, and reserve the shells. Keep some of the clam juice for later use.

How to prepare the stuffing
● Preheat the oven to 375°F (190°C).
● In a skillet, heat olive oil and butter over medium settings. Add the chopped onion, bell pepper, celery, and garlic. Sauté until the vegetables are soft and fragrant.
● Stir in the chopped quahog meat, parsley, thyme, oregano, black pepper, paprika, Worcestershire sauce, and salt to taste. Cook for a few minutes until well combined.
● Remove the skillet from heat and add breadcrumbs. Mix thoroughly until the stuffing holds together. If the mixture seems dry, add a little clam juice to moisten.

Stuffing and baking the shells
● Place the reserved quahog shells on a baking sheet.
● Generously fill each shell with the prepared stuffing mixture, pressing it down lightly.
● Bake the stuffed quahog shells in the preheated oven for about 15-20 minutes until the tops are golden brown.
Once done, remove them from the oven and let them cool slightly. Serve the stuffed cohog hot with lemon wedges on the side.
