Ingredients
• 1 pound of mixed seafood (shrimp, scallops, and crabmeat are great options)
• 1 loaf of day-old bread (French bread or a hearty white bread works best)
• 1/2 cup of unsalted butter
• 1 medium onion, finely chopped
• 2 celery stalks, finely chopped
• 2 cloves of garlic, minced
• 1 teaspoon of dried thymeB
• 1 teaspoon of dried parsley
• 1/2 teaspoon of salt
• 1/4 teaspoon of black pepper
• 1/2 cup of chicken or seafood broth (you can adjust the quantity based on desired moisture)
• 1/4 cup of heavy cream (optional for a richer stuffing)
• 1 egg (to bind the stuffing)
• 1 tablespoon of lemon juice (optional for a touch of brightness)
Instructions
1. Preparing Bread: First, cut 24-hour old freshly baked bread in small cubes. Take a new baking sheet, place your cut cubes on that sheet, and put the sheet in the oven to toast at approximately 350°F (175°C) for 10 straight minutes. You will remove them when they are moisture-free and get light brown colour. Now, allow them to cool at room temperature.
2. Cooking Seafood: Take a large deep pan, and add 2 Tbsp. butter and turn on the medium flame to melt the butter. Now, you will add seafood to cook for about 3-5 minutes. You should cook seafood thoroughly internally. Empty the skillet from the seafood to use it for further steps. It’s optional whether you want to cut seafood in smaller pieces according to your texture and size preference.
3. Sautéing Vegetables: Take the same skillet used above to sauté your fresh vegetables. You will add butter to melt. You will add different herbs and spices to the hot butter, such as parsley, oregano, thyme, salt, and pepper. Afterward, add chopped onion, green onion, celery sticks, garlic, and ginger paste and allow them to sauté over medium flame for 5 minutes. When you start getting the aroma of sautéd vegetables, remove them.
4. Assembling Ingredients: Take a large, clean bowl and combine your individual ingredients. Add the toasted bread cubes, cooked seafood, and sautéed vegetables to the bowl. Mix the ingredients gently. After you mix the ingredients properly, add the broth, heavy cream, and lemon juice to moisten your bread cubes. Just make sure you just toss the bread cubes; you won’t have to make them soggy.
5. Binding with Egg: Break an egg in a separate small bowl and beat until it becomes fluffy. Add to the combined ingredients bowl and mix properly. The addition of an egg will bind your seafood stuffing ingredients together.
6. Baking the Stuffing: Lastly, put an even layer of stuffing mixture on an oiled baking dish. Cover it with aluminium foil and bake at approximately 350°F (175°C) for 20 minutes straight. After 20 minutes, bake the seafood stuffing without foil for 10-15 minutes to make it golden brown and crispy, according to your choice.
Variations and Tips
• Combination of Seafood Products: You can use a combination of seafood products according to your liking and availability. For example, you can prepare stuffing for lobster, prawns, clams, crabmeat, shrimp, white cod fish, etc.
• Spice It Up: If you are used to eating traditional spicy foods or your taste buds and stomach allow the addition of spice, you can add a bit of hot chili garlic sauce or a pinch of cayenne pepper separately to the mixture when you added herbs and other spices.
• Herbs and Seasonings: You can add herbs and seasonings according to your likeness. For example, you can add rosemary, old bay, basil, oregano, saffron, etc.
