Tasty Little Fish

The anchovy are found in the Atlantic Pacific and Indian oceans, they are related to the Herring family and so are classed as an oily fish, silver in colour they weigh about an ounce, and can grow up to eight inches in length, they have sharp teeth and eat plankton and recently hatched fish that is called fry, they can be baked, grilled or fried, perserved in briine, and used as an ingredient for stews, sauces and pizzas or as a garnish for salads, they can be fresh, tinned, in jars in a tube or as an oil. Anchovies with Spaghetti and Garlic

12oz/350g Spaghetti
1 Tablespoon Olive Oil
1 Tablespoon Basil
6oz Black Olives
1 Red Chilli
2 Garlic Cloves
1 14oz tin whole or chopped tomatoes.
1 2oz tin/5og Anchovy fillets

Instructions

  • [1] Finely chop the basil
  • [2] Remove the stones of the black olives and chop them.
  • [3] Finely chop the red chilli.
  • [4] Crush the garlic cloves.
  • [5] Open the tin of tomatoes, and if they are whole chop them into small pieces.
  • [6] Open the tin of anchovy fillets, drain and chop them.
  • [7] Heat the oil in a small pan, and add the basil, red chilli and garlic.
  • [8] Saute until the garlic is soft
  • [9] Add the black olives, chopped tomatoes and anchovies.
  • [10] Simmer for about ten minutes.
  • [11] Bring a large saucepan of water to the boil and add the spagetti cooking for ten to fifteen minutes.
  • [12] Drain well.
  • [13] Remove the other ingredients from the heat and stir well they should form into a sauce.[14] Place the spaghetti in the sauce and stir in anchovy
  • [15] Serve and enjoy.
