D is for Dab

You heard that right – Dab

The Dab is found in the Atlantic Ocean, The North Sea and The English Channel, it is brown with light orange spots on the back with a white underbelly, they are the smallest of the worlds flatfish weighing up to about 2lbs and can grow up to two feet in length, they eat small small fish, snails slugs and worms, they can be grilled, fried, baked, poached or steamed.

Grilled Dab with Vegetables

2 Pints Cold Water.
1oz Butter
Sprinkle of Salt [to your taste
Sprinkle of Pepper [to your taste]
1 Teaspoon Thyme
1 Lemon
1 Orange
10 Potatoes
3 Swede [What vegetables you prefer Parsnip, Turnip, Carrot
4 Dab

Instructions

  • [1] Cut up the potatoes.
  • [2] Cut up the Swede
  • [3] Pour the water into a saucepan, place in it the potatoes and swede and boil them.
  • [4] Chop the thyme.
  • [5] Finely grate the rind of the lemon.
  • [6] Cut it in half and squeeze from it, its juice into a small bowl
  • [7] Finely grate the rind of the orange
  • [8] Cut it in half and squeese from it, its juice into the bowl containing the lemon juice.
  • [9] Mix the lemon and orange juice together.
  • [10] Melt the butter in a small pan and add the juice and rind of the lemon and orange, a sprinkle of salt and pepper to your taste, and the chopped thyme.
  • [11] Heat the grill.
  • [12] On the grill pan, lay the dabs
  • [13] Remove the mixture from the heat, and brush some of it over the dabs,
  • [14] Grill the dabs for up to eight minutes brushing them continually with the mixture
  • [15] When the potatoes and swede have boiled, remove the pan from the heat.
  • [16] Place the potatoes and swede onto a serving plate.
  • [17] Remove the dabs from the grill and place them on the plate with the potatoes and swede.
  • [18] Serve and enjoy.
