R is for Rockfish

A Fish That Changes Colour

The Rockfish is found in the Atlantic and Pacific Oceans, they change colour as they grow older, in youth they are a pinky red and as they enter adulthood change to a bright orange, and as they enter old age they fade to a pale yellow, they weigh up to 39lbs and grow to about three feet in length, they eat small fish and can be fried, grilled or steamed.

Stuffed Rockfish

2 Eggs
4oz Butter
2 cups plain Bread Crumbs.
Half Teaspoon Salt.
1 Teaspoon Black Pepper
Half teaspoon Mustard Powder
3 Tablespoons Parsley
Half Teaspoon Sage
3 Celery Sticks
1 small Onion.
4 large Rockfish Fillets [leave the skins on]

Instructions.

  • [1] Beat the eggs.
  • [2] Finely chop the parsley.
  • [3] Finely chop the sage.
  • [4] Finely chop the celery sticks.
  • [5] Peel and finely chop the onion.
  • [6] Melt the butter in a pan and in it place the chopped onion and celery.
  • [7] Cook the vegetables until they are soft and tender.
  • [8] In a bowl place the eggs and add the breadcrumbs, salt, pepper, mustard powder, parsley, and sage, mix well.
  • [9] Remove the pan from the heat .
  • [10] Pour the onion and celery into the bowl with the other ingredients and mix well.
  • [11] Lightly grease a baking dish.
  • [12] In the dish place side by side two of the Rockfish fillets. [skins down]
  • [13] Spread the mixture over both of the Rockfish fillets.
  • [14] Place the two remaining rockfish fillets on top of the mixture [ skin side up]
  • [15] Place the dish into the oven and bake for forty five minutes at 350
  • [16] Remove the baking dish from the oven.
  • [17] Remove the rockfish fillets from the baking dish onto a serving plate
  • [18] Serve and enjoy.
