Best Stuffed Calamari Recipe

It’s not just bait for fish!

If you love seafood, you should definitely try out calamari. Calamari is a squid, and contrary to popular opinion, it doesn’t only belong in the bait shops. Squid is a great source of protein, calcium, vitamin B12, zinc, vitamin C, phosphorous, and low mercury content. Best of all, there are dozens of scrumptious calamari recipes that you can try out to delight your taste buds.

Here’s what you need to prepare the best stuffed Calamari:

  • 12 calamari tubes
  • ½lb crabmeat, cooked and diced
  • ½lb shrimp meat
  • 8 oz. linguine pasta
  • 8 minced cloves garlic
  • 2 finely chopped green onions
  • ¾ Romano cheese, freshly grated
  • 10 ozs. Parmesan cheese, freshly grated
  • 12 ozs. Cream cheese, sliced into cubes
  • 1 tbsp lemon juice
  • 3 cups milk
  • ¾ cup butter

Instructions

  1. Start by rinsing the calamari tubes. Pat them dry, and then stir together onions, 6 garlic cloves, shrimp and crab meat, and lemon juice in a large bowl. Fill the calamari tubes with this mixture and seal them. Arrange the filled calamari in the bottom of 9×13 baking dish.
  2. Take a saucepan and place butter over medium heat. Once melted, add in cream cheese and the remaining garlic cloves. Stir until the mixture is melted, and then slowly whisk in the milk. Cook until heated. Once cooked, remove the mixture from the heat and add in Parmesan. Season with pepper.
  3. Pour this mixture over all the calamari tubes and sprinkle some Romano cheese on top of each tube. Place the tray in the oven (preheated to 350°F) and heat uncovered until the cheese is brown.

While this happens, prepare the pasta as per package directions. Drain, and serve the stuffed calamari and sauced over a bed of linguine. Enjoy!
