A Popular Version of the Traditional Louisiana Sandwich

Here’s a great recipe for delicious fried oyster po’ boys. The total preparation time for these sandwiches is just 30 minutes, and the ingredients are for 4 servings. Feel free to adjust the ingredients as per your requirements.

Ingredients:

  • Bread of choice (preferably French bread baguettes)
  • Oysters, well drained (1 quart)
  • Eggs, large (3)
  • Cornmeal (3 cups)
  • All-purpose flour (1/4 cup)
  • Salt
  • Cajun seasoning (1 tsp)
  • Tomatoes, medium (2)
  • Lettuce, shredded (1 cup)
  • Mayonnaise (1/2 cup)
  • Dill pickle slices (1/2 cup)

Method:

  1. Beat the eggs in a large bowl. Stir in oysters, and keep them in the eggs for around 5 minutes
  2. Meanwhile, combine cornmeal, flour, and Cajun season in a food storage bag. Add 1 teaspoon pepper and 1½ teaspoon salt. Mix well.
  3. Now one by one, remove the oysters from the eggs. Let any excess egg drip off the oysters.
  4. Put the oysters, one by one, into the bag, and shake well until coated.
  5. Next, fry the oysters in batches until golden brown, roughly around 3 minutes.
  6. Remove the fried oysters to paper towels to drain.
  7. Cut the baguettes in half, crosswise. You can also use French bread rolls or similar bread.
  8. Spread with mayonnaise. Arrange layers of tomato slices and oysters. Add pickles and shredded lettuce
  9. Sprinkle with salt and pepper. Repeat the same till you have made all the sandwiches.
