Not Just for Your Grandparents
Memories of childhood in New England include going to to dinner with my parents and grandparents, and for as long as I can remember, my grandmother always ordered the Baked Haddock. It is perhaps one of the most universal seafood meals and can be found everywhere! But the reason it is so popular is that the recipe is a tried and true tasty dish.
Baked Haddock is cooked in such a way that it really brings out the fresh fish flavor, with a few touches of lemon and butter to add depth. Here is a recipe for you to try at home, even if you aren’t a grandparent yet.
Serves 2
Ingredients:
- 1 lb of haddock, skinned
- 2 tablespoons of Italian style bread crumbs
- One fresh lemon, cut in half and deseeded
- 1 tablespoon of butter, melted
- Cooking spray
Directions:
- Preheat the oven to 290 degrees.
- Take a baking sheet and coat it with the cooking spray.
- Lay the fish an inch or two apart on the baking sheet, allowing them to cook evenly.
- In a small bowl, toss the bread crumbs and melted butter together and mix well.
- Squeeze a half a lemon on each piece of haddock.
- With your fingers, spread the bread crumbs evenly on the fillets.
- Bake in the oven for 22-25 minutes.
Serve with rice pilaf, carrots and green beans for color and enjoy!
