Nick Stellino’ Cast Iron Ocean Scallops

Love scallops?
Here is an easy but exciting recipe by award-winning TV chef, Nick Stellino:

Ingredients

    • 12 scallops (large)
    • 3 tbsp of olive (oil extra light)
    • 3 slices of cooked bacon (large, cut into ½ pieces)
    • 1 tablespoon butter
    • 3 tbsp peas (frozen)
    • 1 cup whipping cream (heavy)
    • 1 tablespoon parsley (chopped)

Recipe for Nick’s Magic Rub:

  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • Salt and pepper
  • 1 tbsp onion powder

Instructions

  • Add butter and bacon slices to pan. Cook over medium heat for around 60 seconds
  • Add the peas
  • Add Stellino’s Rub and the whipped cream
  • Mix well, and keep cooking for 5 minutes
  • Lower heat and cook for a few more minutes
  • Brush the scallops with 1 tablespoon of olive oil and flavor with Stellino Rub
  • Meanwhile, place a huge cast-iron skillet over medium heat until hot .Cook the scallops for around 2 – 3 minutes each side. Next, place the scallops on  a dish and set aside to avoid overcooking
  •  Turn off the heat, and add some parmesan cheddar to the sauce and mix well
  • To serve, place the sauce on the plate and top with scallops
