Ingredients

Court Bouillon:

  • 10 cups cold water
  • 2 medium carrots, quartered
  • 1 large onion, quartered
  • 1 head garlic, halved
  • 2 stalks celery, quartered
  • ½ bunch parsley
  • 1 lemon, halved
  • 2 bay leaves
  • 5 sprigs of thyme, fresh

Cocktail Sauce:

  • 1 cup ketchup
  • ¼ teaspoon Worcestershire sauce
  • 1 lemon, juice and zest finely grated
  • 4 teaspoons prepared horseradish, or to taste, drained
  • Hot sauce, to taste

Shrimp:

  • 1 pound medium or large shrimp, in the shell, rinsed
  • 1 tablespoon kosher salt
  • Lemon wedges
  • Directions
  1. In a pot, put the water, celery, carrots, garlic, onion, lemon, thyme, and bay leaves. Boil over high heat and then lower the heat to simmer. Set the cover slightly ajar and let it cook for 10 to 30 minutes.
  2. Place the shrimp into the liquid mixture and turn off the heat. Let the shrimp cook or until it turns pink and curled while stirring occasionally. For medium shrimps, this will about 2 minutes to 2½ minutes.
    Large shrimps take 3 minutes. Drain and let it cool at room temperature. Peel the shell off and if desired, remove the vein along the curve. If not serving right away, refrigerate until needed. Bring the shrimp to room
    temperature for about 20 minutes before serving when refrigerated.
  3. Create the cocktail sauce in a small bowl and combine the lemon juice and zest, ketchup, Worcestershire sauce, and horseradish. Add hot sauce if desired. Mix well and refrigerate until needed.
  4. Pour the cocktail sauce in a medium bowl or a glass. Loop the shrimp over the edge of the glass or bowl and surround the remaining shrimp around. Garnish with lemon and serve.
