There’s nothing like a group of friends, sitting around a pot shucking crawfish, to cement friendships, ensure good times, and create lasting memories. And nothing tastes better than fresh New Orleans Crawfishx!

A Crawfish Boil is to Louisiana what a Clambake is to people from New England – A Party! The ingredients are simple and the result is magic. Everyone gets their hands into things and that is what makes it so special. A bunch of things are placed in a pot in a certain order and boiled. Yes, it is that simple. Below is a recipe for you to try out.

Crawfish Boil Recipe

You’ll need a proper crawfish pot with a basket insert, which can be placed over a propane burner outside. At the very least, you’ll need a huge pot that can hold a total of 12-15 gallons, with a basket insert.

Ingredients:

Cooking Crawfish

  • 10 gallons water
  • 6 gloves garlic
  • 10 lemons halved
  • 7 large onions, coarsely chopped
  • 1 celery, coarsely chopped
  • 10 bay leaves
  • 2 bags crab boil
  • 2 boxes salt
  • 2 cups cayenne pepper
  • 2 cups black pepper
  • 5 pounds new or red potatoes washed but not peeled
  • 15-20 ears of corn broken in half
  • 1-2 pounds smoked sausage, cut into large pieces
  • 35 to 40 pounds LIVE crawfish

Directions:

Crawfish Boil

  1. Crawfish need to be kept alive until you are ready to cook them. Soak the crawfish in cold water for about 10 minutes. Make sure you remove and throw away any dead crawfish.
  2. Half fill a large pot with water, and bring to the boil. You can do this over a large outdoor burner over high heat.
  3. Add the lemon juice, garlic, celery, bay leaves, crab boil, and seasonings to the pot. Cover with a lid and bring to a boil.
  4. Let the seasonings blend for 2-4 minutes.
  5. Into the basket insert add potatoes, onions, sausage and corn. Let the water come back to a boil and cook until potatoes are tender, about 10-15 minutes.
  6. Add the crawfish, return to a boil, and cook for 4 minutes only!
  7. Turn off the heat and leave them to soak for 20-25 minutes.
  8. Remove basket and drain the crawfish and vegetables.

Now, it is time to start some serious eating. Remember eating crawfish: Pinch The Tail and Suck the Head. You will do just fine.
