Bluefish is strong in smell but is Big in flavor. Because of the strong aroma, many people who love eating blue fish at a restaurant are apprehensive of cooking it at home. They fear that if they cook themselves, the aroma of the fish will linger after cooking. But do not worry, here is an award wining blue fish recipe which is very delicious and you won’t feel the smell. The citrus marinade of the dish gives the fish a great flavor and minimizes the odor.

Ingredients

  • Bluefish fillet – 4 pounds
  • Orange juice – 1 cup
  • Fresh lime juice – ¼ cup
  • Olive oil – ¼ cup
  • Dry white wine – 1 tablespoon
  • Salt and black pepper – as per taste
  • Citrus flavored seafood mixture – ¼ cup

*Citrus Seafood Marinade Mix is a readymade mixture and an easy way to add the flavors to seafood. It contains salt, spices (including black pepper, red pepper, allspice, and thyme), sugar, onion, red bell pepper, garlic, citric acid, corn syrup solids, calcium stearate, calcium silicate, and silicon dioxide (added to make free flowing), hydrolyzed corn gluten, sunflower oil, natural flavor, orange peel, lemon juice solids, disodium inosinate and disodium guanylate (flavor enhancers), and extractives of paprika.

Directions

  1. Take a large bowl and put the fish fillet into it. Add the lime juice, orange juice, lemon juice, white wine, olive oil, salt and pepper, into it. Mix them properly so that the marinade is properly coated on the fillet.
  2. Leave the squeezed lemon in the bowl and marinate the fillet in the bowl for half an hour. The citrus marinade along with the squeezed lemon eliminates the odour of the bluefish which is quite distinct otherwise.
  3. Preheat the grill and grease the grate when it is hot.
  4. Keep bluefish fillets on the hot grill without the lemon and excess marinade. Cook the fish for about 4 to 5 minutes on both the sides. Before taking out from the grill, check with a fork if fillets are properly cooked or not. When done transfer them on the serving plate and discard the dark blue portion of the fillet before serving.
