If you’re stuck at home and looking for a fresh fish option, why not make fried fish sandwiches? Tasty and (moderately) healthy, these make a great lunch or a fun dinner on the patio. They are not as difficult to make as you might think!

- 1 cup flour
- 1 ½ cup panko bread crumbs
- 2 lbs cod or mackerel fillets (haddock works well too)
- 2 eggs whisked with a dash of pepper and and 2 tbsp water
- teaspoon garlic powder
- 1 teaspoon paprika
- salt
- 1 teaspoon onion powder
- 1 teaspoon cayenne powder
- 3-4 cups of Crisco shortening (browns the batter nicely)
- 1 teaspoon paprika
Directions
- Cut your fish into 8 oz pieces for easy battering
- Grab 3 bowls and put egg wash in one, flour in the second and panko crumbs in the third.
- Split your seasonings between the flour and crumbs, adding salt to both mixtures
- In a dutch oven or large, deep skillet, heat your oil/shortening
- While the oil heats, dredge the fish in egg wash then flour, egg wash again then bread crumbs
- Rest the fillets for 10-15 minutes to the batter has a chance to adhere
- Once your oil is hot, place the fish in for 4-5 minutes, flipping once at about 2 minutes and again at the end to ensure a golden brown color all over
- When done, place the fish on a paper towel covered plate and pat some of the oil off the fish
To make a great sandwich, choose your favorite bread, I recommend a soft potato roll or brioche. Top it with lightly tossed coleslaw and a tablespoon of tartar sauce. Enjoy!
