Easy Lobster Corn Chowder

Lobster Corn Chowder: A Simple Recipe

Prepare this Delicious Soup Within Two Hours

A lot of people love seafood, and they also love chowder. So why not combine the two? Here’s a simple recipe to prepare lobster corn chowder:

Ingredients
The soup base requires:

  • Butter (6 tablespoons)
  • Chopped onion (1 cup)
  • Cream sherry (1/4 cup)
  • Sweet paprika (1 teaspoon)
  • Whole milk (4 cups)
  • Heavy cream (2 cups)
  • Dry white wine (1 cup)

For the soup:

  • Lobster meat (1 pound)
  • Corn, fresh or frozen (3 cups)
  • Diced bacon, large (1/4 pound)
  • Potatoes, sliced into large chunks (2 cups)
  • Chopped onions (2 cups)
  • Diced celery (3 stalks )
  • Salt
  • Ground pepper
  • Fresh chives
  • Cream sherry (1/4 cup)

Instructions:
For the base:

  1. Melt butter in a soup stock pot</|i>
  2. Add onions/|i>
  3. Cook until soft (but not until brown)/|i>
  4. Add sherry and paprika. Mix and cook for a minutea
  5. Add wine, milk, and cream. Simmer on low heat for about 15 minutes, stirring from time to time

For the soup:

 

  • Cook the bacon in a separate pan until crisp and brown
  • Remove bacon from the pan and set aside
  • Add the vegetables, corn, salt and pepper in the same pan, and cook for up to 5 minutes
  • Add this mixture to the soup base in the stock pot
  • Add the lobster meat and sherry
  • Simmer for about 15 minutes. Make sure the potatoes are tender
  • Garnish with chives. You can also use green onion
  • Garnish with chopped bacon (if you haven’t added to the soup base)

That’s about it. Serve with some crusty bread. For best taste, use Yukon golden potatoes.
