The Shrimp Scampi Pasta

Tasty, Healthy & Easy to Prepare!

Here’s a simple recipe for a delicious seafood pasta dish that you can make for lunch: Shrimp Scampi Pasta.

Ingredients:

● 8 oz spaghetti
● 1/4 cup olive oil
● 4 cloves garlic, minced
● 1/4 tsp red pepper flakes (optional)
● 1 lb raw shrimp, peeled and deveined
● 1/2 cup dry white wine
● Juice of 1 lemon
● 2 tbsp unsalted butter
● Salt and pepper, to taste
● Chopped parsley, for garnish

Instructions:

1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the garlic and red pepper flakes (if using) and cook for 1-2 minutes until fragrant.
3. Add the shrimp to the skillet and cook for 2-3 minutes per side until pink and cooked through.
4. Remove the shrimp from the skillet and set aside. Increase the heat to high and add the white wine and lemon juice to the skillet. Cook for 2-3 minutes until the liquid has reduced by half.
5. Reduce the heat to low and stir in the butter until melted and combined.
6. Add the cooked spaghetti and shrimp to the skillet and toss to coat in the sauce. Season with salt and pepper to taste.
7. Serve the shrimp scampi pasta hot, garnished with chopped parsley if desired.

Shrimp is a good source of lean protein and is low in calories and fat. Garlic has potential health benefits, including improving cholesterol levels and boosting the immune system. Additionally, using olive oil in the recipe provides healthy fats that can be beneficial for heart health.

However, the recipe includes pasta, which is a source of carbohydrates. It also includes butter, which is high in saturated fat. You could substitute the butter with a healthier fat such as extra virgin olive oil or use a smaller amount of butter.

This recipe is quick and easy to make, and the flavors of the shrimp, garlic, and lemon work together perfectly to create a delicious and satisfying lunch dish. Enjoy!
