Fresh Seafood Is Beautiful

Smells Crisp and Clean, Like the Sea

I wrote an article about Softshell Crabs. I would like to extend that to All Seafood and really All Food in general. How do you know when a piece of fish is BAD?

Fish and Shellfish should smell like the ocean, fresh and clean. The eyes should be clear, not cloudy. Instinctively, you know that. Some people want to save money and buy a less than fresh piece of fish. They are playing with fire because it is very easy to get food poisoning. When you get food poisoning, you have nausea, diarrhea or you just cannot stop throwing up. When you throw up a lot, you can get dehydrated. When you get dehydrated, your liver slows down its function and your kidneys cannot purify your blood. None of that is good – AT ALL.

The upside is the fact that a fresh piece of fish or shellfish does not require much skill to prepare. It almost cooks itself. Swordfish requires approximately 3 minutes per side on the grill. Top that with a square of lemon or lime butter and life is great.

I will continue to post about the virtues of fresh fish and shellfish. It does cost a bit more, but you really do get what you pay for.
