Halibut by Lidia Bastianich

Easy To Prepare & Multiply For Guests

 

Cooking aficionados are familiar with the work of Lidia Matticchio Bastianich. An Italian cuisine expert, she owns and operates the Felidia restaurant in New York City and popularizes Italian cooking through books, TV appearances, and lectures.

Here we provide you a snapshot of her famous Halibut recipe, adapted from Lidia’s Italy in America.

Ingredients

  • 3 sliced garlic cloves
  • 4 skinless halibut fillets (6 to 8 ozs.)
  • Kosher salt
  • ½ cup extra-virgin olive oil
  • 1 cup crushed saltine crackers
  • 1 tbsp chopped thyme
  • 1 cup grated white cheddar cheese

Recipe

  1. Preheat oven to 4000F
  2. Take a cup and mix garlic and ¼ tsp kosher salt into the olive oil. Steep for at least 30 minutes (the more you steep, the better the taste). Set aside.
  3. Take a bowl and mix thyme and saltines. Add ¼ cup of the olive to the bowl, leaving the garlic slices in the cup.
  4. Add grated cheese to the bowl. Mix well.
  5. Take a large plate and spread the crumbs. Use a brush to cover the fish with the remaining oil, and add salt to taste.
  6. If some oil is still left, use it to grease a rimmed baking sheet.
  7. Cover each piece with crumbs thoroughly on both sides.
  8. Put the coated fish on the baking sheet. Spread the fillets, keeping an inches’ space between them.

Finally, bake the fish in the preheated oven until the crumbs are golden and crisp, and the fish is thoroughly cooked.

This recipe takes 20 minutes to prepare and serves 4. Lidia’s recipe doesn’t include veggies, but you can add fresh tomatoes if you like.
