Most Delicious Appetizer
I visited with three friends in Jamestown RI, a place famous for clams. We dug some up and brought them back for dinner. It was the first time I had clams casino. Maybe it was the weather, my friends or just the clams, but this is a 33-year-old memory that will not go away!
Ingredients
- ½ Pepper
- 2 strips of bacon cut into 12 pieces
- ½ cup plain breadcrumbs
- Pinch of salt, 5 grinds of pepper
- 2 tablespoon butter
- 3 Lemon wedges
- 2 tablespoons grated Parmesan cheese
Methods
- Place the clams in a Dutch oven, get hot. Add ½ cup water and cover for 5 minutes. When clams are open, move to a bowl
- Place a frypan on medium. Add butter. When hot, add bacon. Cook the bacon to almost done but NOT crispy. Remove the bacon to a bowl
- Add diced pepper to the same pan and sauté for approximately 5 minutes till slightly softened. Add the garlic and sauté for 45 seconds. Move to a bowl and add breadcrumbs.
- Add parmesan cheese, a pinch of salt, 5 grinds of pepper and a dash of Worcestershire sauce. Remove clams from the shell . Discard the top shell.
- Top each clam with the breadcrumb mixture. Place a piece of bacon on top
- Place clams under a broiler for approximately 5 minutes. Bacon should be crisp
- Top with a pinch of parsley
