Ceviche
Ceviche or cebiche is a famous Peruvian meal. It’s made up of raw fish which is cured from a combination of citrus juices and spices. Normally, citrus juices come from key lime or bitter orange.

You can also add onions, salt, and pepper to the marinade. It is often eaten with chunks of corn-on-the-cob. You can also add sweet potato for a mixture of flavors and textures. Ceviche is best made with freshly caught fish.

While it is a Peruvian dish, it’s equally famous in Ecuador and Chile.

Encebollado

Encebollado is perhaps Ecuador’s national dish. The name means “cooked with onions.” And indeed, onion is one of the main ingredients.

This recipe is actually a fish stew. It also includes coriander, pepper, and fresh tomatoes. It’s best served with pickled red onion rings and boiled yucca or cassava.

But you can also serve Encebollado with a variety of side dishes. Serve it with popcorn, ripe avocado, bread, toasted corn or nuts, and plantain.

Fish Tacos
Tacos are one of the famous Mexican dishes. But while it’s normally made with shredded beef, you can choose a healthier option. There are many variants of fish tacos available, and you can create your own recipe.

But grilled fish tacos with peach salsa is one of the most famous variants. The smokiness of the grilled fish complements the sweetness of the peach salsa. You can also add corn, some veggies, and pair it with a great mango shake.
