Oreganata refers to the style in which you prepare an entrée. You might have seen oreganata on the menus of Italian restaurants. The flavor of oreganata comes from herbs and garlic, whereas the crispiness is due to breadcrumbs.
While Italian breadcrumbs are mostly used to prepare oreganata, you can also use panko breadcrumbs.
Oreganata is used to prepare clams and shrimps as well, but red snapper is a great protein of choice. The following is a simple recipe to prepare red snapper oreganata in less than 30 minutes. This recipe uses Panko breadcrumbs, but you can always alternate with Italian breadcrumbs as well.
You can also use this recipe to prepare chicken.
What you Need:
- ¾ pound Red Snapper
- ½ cup panko breadcrumbs
- ½ tsp. (dried)
- 1 tbsp parsley (dried)
- ¼ tsp basil (dried)
- 1 tbsp parmesan cheese
- 1 tbsp Extra Virgin Olive Oil
- ½ tsbp lemon juice
- 3 garlic cloves
If you would like to use fresh herbs, just double the herb quantities from above
How to Prepare:
- Start off by mixing all the dry ingredients, namely the breadcrumbs, dried herbs, and cheese.
- Use a garlic press to crush the cloves, and combine the crushed garlic pieces to the breadcrumb mixture. Mix well.
- Now add the ‘wet’ ingredients, namely the oil and lemon juice. Mix well so the breadcrumbs are really moist.
- Season the snapper with olive oil, salt, and pepper. Cover the top of the snapper with the breadcrumbs mixture. Alternately, you can crisp the mixture in a small pan for a couple of minutes to add extra crunch.
- Cook the snapper in a 350o oven for 20-25 minutes.
- Remove from oven and let it sit for a couple of minutes.
