Maryland Seafood Specialties

Maryland is one of the oldest states in the Union, and is one of the two that is lucky enough to front on the Chesapeake Bay, the area’s largest watershed and one of the biggest in the United States. As such, much of the traditional food comes from the Bay, with some of the specialties being nationally renowned.

Maryland Crab Cakes

Crab cakes prepared in the Maryland style are delightfully simple and notoriously delicious. Comprising crab, white bread, mayonnaise and a few spices, it is one of the easiest and most satisfying ways to prepare crabmeat and can be served fried, cold, or practically raw.

Steamed Crab

The Chesapeake Bay is home to the Blue Crab, one of the most plentiful and rewarding arthropods. Traditionally prepared, the crab is simply steamed and served whole, with a mallet and a nutcracker to enable ingress through the armor to the juicy flesh inside. A bushel of crabs will easily feed five people and occupy them for hours, as well as making an unholy mess! Best enjoyed outdoors with a light beer.

Chesapeake Bay Oysters


The Bay’s oyster banks are plentiful, both the wild and farmed varieties, and yield millions of delicious hard-shelled creatures yearly of a size and flavor to rival the more famous northern varieties. Best harvesting time is in the winter months, as in summer the oysters have just finished spawning and are yet immature.

Old Bay Seasoning


No discussion of Maryland’s delicacies would be complete without mention of Old Bay Seasoning. Created by a German immigrant in 1939 to complement the Blue Crabs that were so plentiful bars offered them for free at the time, its distinctive savory and slightly spicy taste is eponymous in most seafood dishes from the area, and the classic yellow can is spotted in many regions of the American South as well.
