Simple and Easy

It was an excessively hot day in 1998. All I could do was float around in the pool. Unbeknownst to me, my wife took a walk around the corner. She went to a new restaurant named Firefly owned by a friend of hers. She returned with a sandwich for me. It’s is still deep in my memory, so good. The components of the sandwich are different, but from a taste and texture standpoint, everything works!

Ingredients:

    • 2 balls of mozzarella
    • 1 jar of sun-dried tomatoes packed in oil
    • 5 leaves of fresh basil

2 pieces focaccia, approximately 4”x 4”
(a firm, bread like Italian bread or Country loaf used)

Directions:

  1. Cut the ball of mozzarella into 4 pieces
  2. Coarsely chop 6 or 7 sun-dried tomatoes
  3. Chiffonade the 5 basil leafs
  4. Slice the focaccia in  half.
  5. Brush some sun-dried tomato oil on the cut side of the focaccia
  6. Place the mozzarella on one piece of focaccia. Very lightly salt and pepper
  7. Place chopped up sun-dried tomatoes on the mozzarella
  8. Add  basil
  9. Place the second piece of focaccia on top
