Simple and Easy
It was an excessively hot day in 1998. All I could do was float around in the pool. Unbeknownst to me, my wife took a walk around the corner. She went to a new restaurant named Firefly owned by a friend of hers. She returned with a sandwich for me. It’s is still deep in my memory, so good. The components of the sandwich are different, but from a taste and texture standpoint, everything works!
Ingredients:
-
- 2 balls of mozzarella
- 1 jar of sun-dried tomatoes packed in oil
- 5 leaves of fresh basil
2 pieces focaccia, approximately 4”x 4”
(a firm, bread like Italian bread or Country loaf used)
Directions:
- Cut the ball of mozzarella into 4 pieces
- Coarsely chop 6 or 7 sun-dried tomatoes
- Chiffonade the 5 basil leafs
- Slice the focaccia in half.
- Brush some sun-dried tomato oil on the cut side of the focaccia
- Place the mozzarella on one piece of focaccia. Very lightly salt and pepper
- Place chopped up sun-dried tomatoes on the mozzarella
- Add basil
- Place the second piece of focaccia on top
Enjoy!
