I am providing you with a series of articles about New Orleans. The great food and the experience of Mardi Gras. Below, is the first of 3 Oyster Recipes and it should get your taste buds activated. You can easily do this.

New Orleans Oysters with Bacon & Barbecue Sauce

Barbeque Sauce
Ingredients:

Barbecued Oysters 1

  • 1 tablespoon dry mustard
  • 1 teaspoon ground cumin
  • 1 teaspoon pimenton (smoked paprika)
  • Freshly ground black pepper
  • Bunch fresh thyme
  • ½ onion, chopped
  • 2 garlic cloves, chopped
  • ¼ cup fresh chile
  • 2 cups ketchup
  • ¼ cup brown sugar
  • ¼ cup molasses
  • 1/8 cup white vinegar
  • 2 tbsp. extra virgin olive oil

Bacon Barbecue Oysters
Ingredients:

Barbecued Oysters 2

  • 2 dozen large oysters on the half shell
  • Crispy cooked bacon, roughly chopped, or broken by hand
  • ½ onion, chopped fine
  • Yellow celery with leaves (centers of hearts), washed and chopped fine
  • Lemon wedges
  • Sliced fresh chiles

Directions:

  1. Boil onion and celery leaves for 5 minutes.
  2. Remove from heat, add thyme. Add vinegar and salt/pepper to taste.
  3. Add to Barbeque Sauce.
  4. Top each oyster with BBQ sauce and chopped bacon.
  5. Place on grill, close lid for a minute or two to caramelize the sauce, or just cook on open grill until they to bubble.
  6. Remove from grill and top with sliced chilies, bits of celery leaf and garnish with lemon.
