Simple California Bouillabaisse

They Make You Look Great

This is yet another simple and delicious seafood recipe. You might think it is Cioppino. Pretty close, but you can use this to simply make delicious meal from whatever seafood you have. Just make sure that it is fresh. That is really the difference between Great, mediocre and bad.
If do not have the seafood that is on the recipe, substitute whatever firm fish or shellfish you have.

Ingredients

  • 1 leek (white part), chopped
  • 2 cloves garlic, minced
  • 1 Tbsp. olive oil
  • 1 1/2 cups chopped tomatoes
  • 6 oz dry white wine
  • 4 cups fish (or chicken) stock
  • ½ tsp grated orange rind
  • 1-2 pinches saffron
  • 3 tbsp fresh parsley, chopped
  • ½ pound California rockfish fillet, cubed
  • ½ pound California shrimp, peeled/deveined
  • ½ pound California lobster meat, cooked/cubed

Instructions:

  1. Heat olive oil, sauté leek, garlic until limp.
  2. Stir in tomatoes, cook two minutes.
  3. Add fish stock, wine & seasonings.
  4. Cook over medium heat until mixture simmers.
  5. Reduce heat, simmer 15 minutes.
  6. Add fish/shellfish. Cover; simmer 5 minutes until seafood cooks.
