Simple Salmon Burger Recipe

I made salmon burgers for my son and I for the first time. They were delicious and a big hit for both of us.

After our simultaneous first bite, we both commented on how they tasted like there was bacon on them. There was not. The salty, crispy flavor was that good.

Here is my simple salmon burger recipe that serves 2.

Ingredients:

  • 1 pound fresh salmon
  • 1 whole egg
  • ½ cup breadcrumbs (use panko breadcrumbs for extra crispiness)
  • 1 teaspoon lemon juice (freshly squeezed by you)
  • 2 tablespoons extra virgin olive oil for skillet (or grill) coating
  • A pinch each of salt and pepper

Instructions:

  1. First gather all the ingredients, and then remove the skin from the salmon. Ensure there are no bones.
  2. Take a quarter of the salmon and dice it with a knife into the smallest pieces you can.
  3. Place the ¼ diced salmon into a small mixing bowl and mix in the bread crumbs.
  4. Take the remainder ¾ of the salmon and place it into a food processor along with the egg, lemon juice, salt and pepper.
  5. Pulse until you have a puree.
  6. Combine the salmon mixtures, puree and course, and make 2 large patties.
  7. Coat your skillet (or grill) with the olive oil. When the skillet is hot (medium to high heat), cook thoroughly flipping once or twice. Cook through until the outside is crispy, golden brown.

While the salmon patties are cooking, you can prepare the roles and burger fixings as you like. I used toasted brioche rolls and added tartar sauce, a large, think slice of tomato and mixed, spring lettuce.

Lastly, you can make your own quick tartar sauce by mixing light mayonnaise, chopped sweet pickle relish, a bit of lemon juice and salt.
