A simple, amazing seafood stuffing!

Stuffing matters. A lot. And when it comes to finding the best stuffing for your seafood, you know you want something special. The wrong stuffing can spoil an otherwise perfect dinner.

So here’s an amazing seafood stuffing that every seafood lover will enjoy.

As always, ingredients first:

  • Ritz cracker (ground up): 1 cup
  • Breadcrumbs: 1 cup
  • Onion: 1⁄2 cup
  • Bay Scallops (fresh): 1 lb
  • Shrimp (fresh): 1 cup
  • Lump crab meat (fresh): 1 cup
  • Celery (sliced): 1⁄2 cup
  • Bell pepper, yellow and orange: ½ cup (chopped)
  • Eggs: 2
  • Butter (melted): 3/4 cup
  • Cooking sherry: 1⁄4 cup, OR White wine: 1⁄4 cup
  • Fresh garlic clove (chopped): 1 chopped
  • Salt & pepper: To taste

This is the stuff great stuffing is made of!

Start off by cooking the seafood in a cup of boiling water (salted). Cook it until its 75% done and then strain the seafood out of the water. Next, add the Ritz crackers and breadcrumbs. Cover them till the liquid is absorbed.

Now take a separate skillet. Caramelize the peppers, onion and celery and add them to the crackers-breadcrumbs mixture. Then add the melted butter and eggs. Stir in the seafood and the white wine or sherry. Cover it and let it stand for 15 minutes.
