A Simple Recipe
Ingredients:
- 1 pound thawed and diced Wild Alaska Pollock
- Tortilla strips
- 1/2 teaspoon garlic salt
- 1/8 teaspoon white pepper
- 1 tablespoon olive oil
- 1/2 cup fresh lime juice
- 1/2 teaspoon fine sea salt
- 1 whole lime
- 1 tablespoon vegetable oil
- 1/2 sweet onion (small)
- 2 Roma tomatoes
- 1/4 cup fresh cilantro
- 1 avocado (0.5-inch dice)
Method
- Semi-defrost the fish for 24 hours.
- Cut 1/2″ thick cuts from a side of the square
- Spread the cuts out in a layer on the sheet plate
- Cover and defrost until thawed
- Drain the water and slice into 1/2″ measured pieces
- Put the Pollock pieces into a sieve and drain completely
- Next, place into a big blending bowl and squeeze the whole lemon on the pieces
- Add salt and blend
- Transfer the fish into a large compartment, and cover with plastic wrap. Press it down with gloved hands. Cover and refrigerate for 4-12 hrs. Make sure the fish is covered with the mixture.
- Now, take marinated fish and use a sieve to drain all the juices completely. Transfer to a blending bowl, and add all other ingredients EXCEPT avocado. Mix well with an plastic spatula.
- Finally, add in the diced avocado and blend delicately to mix, without separating it.
