A Simple Recipe

Ingredients:

  • 1 pound thawed and diced Wild Alaska Pollock
  • Tortilla strips
  • 1/2 teaspoon garlic salt
  • 1/8 teaspoon white pepper
  • 1 tablespoon olive oil
  • 1/2 cup fresh lime juice
  • 1/2 teaspoon fine sea salt
  • 1 whole lime
  • 1 tablespoon vegetable oil
  • 1/2 sweet onion (small)
  • 2 Roma tomatoes
  • 1/4 cup fresh cilantro
  • 1 avocado (0.5-inch dice)

Method

  1. Semi-defrost the fish for 24 hours.
  2. Cut 1/2″ thick cuts from a side of the square
  3. Spread the cuts out in a layer on the sheet plate
  4. Cover and defrost until thawed
  5. Drain the water and slice into 1/2″ measured pieces
  6. Put the Pollock pieces into a sieve and drain completely
  7. Next, place into a big blending bowl and squeeze the whole lemon on the pieces
  8. Add salt and blend
  9. Transfer the fish into a large compartment, and cover with plastic wrap. Press it down with gloved hands. Cover and refrigerate for 4-12 hrs. Make sure the fish is covered with the mixture.
  10. Now, take marinated fish and use a sieve to drain all the juices completely. Transfer to a blending bowl, and add all other ingredients EXCEPT avocado. Mix well with an plastic spatula.
  11. Finally, add in the diced avocado and blend delicately to mix, without separating it.
