Believe it or not, oysters are available nearly anywhere that there is salty, brackish water. However, with all these different oysters from different parts of the country, come slightly different sizes and tastes. There are some that can tell the difference. All I know is that they are great. Below is a recipe for oyster stew, that was crafted for Pacific Northwest oysters. If you use oysters from a different part of the country, I will not tell on you and they both come fantastically. Just use fresh oysters. That really does mean everything.

Ingredients

  • 2 pints small/medium shucked oysters
  • 8 strips cooked bacon
  • 4 tbsp butter
  • 2 cloves garlic, chopped
  • 1 medium onion, diced
  • 1 pint heavy cream
  • 4 c milk
  • 2 tsp salt
  • 1 tsp pepper
  • ½ tsp dried basil
  • pinch of thyme
  • sliced green onions

Directions

  1. Blanch oysters in boiling, salted water for 2-3 minutes
  2. Drain, cut into bite-sized pieces
  3. Melt butter, add cooked bacon pieces, diced onion, garlic, sauté
  4. Add oysters, heavy cream, milk, salt, pepper, basil and warm (do not boil)
