Whenever I see video about Alaska, I get hungry for their seafood. When a bear catches and eats a salmon, I want some of that because it looks so good. Below is the first of 3 top Alaskan Seafood Recipes.

Alaskan Omelet Ingredients

  • 1 cup poached Alaska chunked salmon or 1 can salmon, drained/cleaned
  • 3 tbs. butter or margarine, divided
  • 6 eggs, beaten
  • 1 tbsp. finely chopped green onion
  • Dash salt/pepper
  • 1/3 cup dairy sour cream
  • 2 tbsp. finely chopped parsley

Directions

  1. Flake salmon
  2. Melt 1 Tbsp. butter in saucepan; add salmon and heat briefly. Place salmon on paper towel to drain
  3. In separate bowl, combine eggs, green onion, salt/pepper; mix well
  4. Add 2 tbsp. butter to pan; add egg mixture, cook until set
  5. Spoon salmon over half of omelet; fold in half, cook on both sides. Put onto warm plate
  6. Spoon on sour cream, sprinkle with parsley. Makes 3 or 4 servings

*If desired, 1 cup Alaska Pink shrimp, Alaska Dungeness, King or Snow crab or a combination may be substituted
