The Second of Three Wild Alaska Recipes

Alaskan Sockeye Salmon Bites

A delicious, fast and healthy Salmon Treat should make this when you’re in a time pinch, or not. Delicious is Delicious. Now, let’s get to it.

Ingredients:

  • 1 Tbsp olive oil
  • ½ Tsp sesame oil
  • 2 garlic cloves, chopped fine
  • 1 Tbsp grated ginger
  • ¼ cup Eroica Riesling (white wine)
  • 1/3 cup soy sauce
  • 1 Tbsp orange juice
  • 1 Tbsp honey
  • 1½-2 lbs Alaska Sockeye salmon, cut in 2-inch pieces
  • Green onion curls or cilantro (optional for garnish)

Directions:

Marinade:

  1. Heat olive/sesame oils over medium heat.
  2. Sauté garlic and ginger until soft.
  3. Add Riesling wine, soy sauce, orange juice and honey; simmer until reduced by half.
  4. Cool, add salmon pieces to marinade, marinate for 3-5 minutes, turning twice.
  5. Prepare the Meal
  6. Grill salmon over medium heat, cooking just until fish is opaque throughout.
  7. Garnish with green onion curls or cilantro, if desired with picks to serve.
