Alaskan Sockeye Salmon Bites
A delicious, fast and healthy Salmon Treat should make this when you’re in a time pinch, or not. Delicious is Delicious. Now, let’s get to it.
Ingredients:
- 1 Tbsp olive oil
- ½ Tsp sesame oil
- 2 garlic cloves, chopped fine
- 1 Tbsp grated ginger
- ¼ cup Eroica Riesling (white wine)
- 1/3 cup soy sauce
- 1 Tbsp orange juice
- 1 Tbsp honey
- 1½-2 lbs Alaska Sockeye salmon, cut in 2-inch pieces
- Green onion curls or cilantro (optional for garnish)
Directions:
Marinade:
- Heat olive/sesame oils over medium heat.
- Sauté garlic and ginger until soft.
- Add Riesling wine, soy sauce, orange juice and honey; simmer until reduced by half.
- Cool, add salmon pieces to marinade, marinate for 3-5 minutes, turning twice.
- Prepare the Meal
- Grill salmon over medium heat, cooking just until fish is opaque throughout.
- Garnish with green onion curls or cilantro, if desired with picks to serve.
